Easy No-Work Healthy Dinner

Looking for an easy dinner recipe? Look no further. Here’s an easy no-work healthy dinner recipe you can dish out on a busy weeknight.

Let me ask you – do you like making dinner? If you are like me, you’d wish you had a magic button you could press and poof….dinner is served!

Well, this recipe comes almost close to it (we’re still in the real world it reminds us 😉 ). All it needs are these 3 easy steps: set (on baking tray), sprinkle (seasoning), bake!!! Are you ready? Here we go…

When food gets convenient, it’s easy to skimp on quality but uh-uh, not with you and me! That’s why we use healthy simple wholesome ingredients:

  1. Wild caught Atlantic salmon fillet (I was in a pinch for time, so I did not even defrost it – how easier can it get!)
  2. Organic asparagus: one bunch
  3. Organic rutabaga: about a fist size for each serving
  4. Olive oil for cooking
  5. Seasoning: salt, pepper, garlic powder and my favorite – McCormick’s Italian seasoning grinder. Among all the Italian seasonings I have tried, I think this one hits the right combination of notes on the different flavors.

SET:

To save a little time, let’s turn on the oven to start preheating to 320 F as we get everything ready.

Now let’s get a baking tray big enough to hold all the above ingredients (yes they all go in one container: remember it’s a no-stress but healthy dinner). Let’s grease the entire cooking surface of the tray with a little olive oil.

Next, let’s lay out all the meat (aka fish), carbs (starches aka rutabaga) and vegetables (asparagus) in their separate sections. (Tip: If you are new to using asparagus, you may want to snap off the bottom 1-2 inches of the stem; when you gently bend the stalk, it will naturally snap at the right place). This is what it looked like at my end:

SPRINKLE:

Now each section gets sprinkled (key word: sprinkled, no tossing or rubbing even) with its own compatible seasoning:

  1. Salmon: salt, pepper and Italian seasoning
  2. Asparagaus: salt, pepper, garlic
  3. Rutabaga: salt

BAKE:

  • Bake at 320 F for about 40 to 45 minutes, turning the fish over at about 20 minutes (we could use a timer for 20 minutes, freeing up some part of our brain for other fun stuff meanwhile)
  • The asparagus may be done by 15-20 minutes too (al dente/ lightly crisp), you could remove that section from the oven or like lazy me, just leave it in there till the entire cooking is done: it still was flavorful. Well I was busy at work (work from home 😉 in case you were wondering), at least that was my excuse for not removing it sooner.
  • Let’s turn over the rutabaga pieces as well at 20 minutes.
