Easy Northwestern Style Mushrooms In Under 10 Minutes

Ready for a dinner side dish you can make in under 10 minutes? If you like easy, fast and healthy recipes, this one may be for you!

Ingredients:

  1. Mushrooms of your choice: 1 lb —-> I use simple truth organic baby bella mushrooms (pre-sliced or you can manually slice them); a three mushroom blend (wild mushrooms/ combination with shiitake and oyster mushrooms) works wonders too for this recipe
  2. Olive oil: 3 Tbsp
  3. Garlic cloves: 3, minced
  4. Salt to taste
  5. Black pepper powder: as desired
  6. Italian parsley: 1 Tbsp, chopped (or see my tip below)

Method:

  1. Heat the olive oil in a medium stir-fry pan on medium heat
  2. Add in the mushrooms and saute till slightly wilted (about 4- 5 minutes)
  3. Add the garlic, salt and pepper, continued to stir fry for about 3 minutes
  4. Add the chopped parsley, cover with a lid and cook for about 1 minute
  5. Stir and remove from the flame.

There you go….that’s mushrooms in under 10 minutes! Goes great with steak or chicken breast or even by itself. Enjoy!!

*Tip: Let me share with you a little secret if it may save you time and energy….As soon as I get them home from grocery shopping, I store my fresh leafy herb greens (parsley, cilantro etc) in the freezer. When it’s time to use them, all we need to do is to lightly press on the tips of the leaves. They crumble onto the pan looking like fresh chopped leaves when done. Lets keep in mind this only goes for recipes needing the greens to be cooked or sauteed.
